on the site it says 5 standard servos, in the instructions it states 5 micro servos...

can i use standard servos or must i use the micros?

You'll want micro servos. Standards are way to heavy for a 25 size bird.

As much as you can get... I used to run the HS 81's.. but the gears are pretty fragile on them... and the pots go bad quickly. I went to the Futaba 3101's, but I'm not sure if they are available anymore... Something like 35 oz of torque.
